Warm Spinach Salad with Delicata Squash and Ricotta Salata

Delicata squash, which has sweet, pale-orange flesh, is a good source of vitamins A and C, potassium and iron. When roasted, the pretty scalloped peel of this winter squash becomes tender enough to eat. If you can't find Delicata, use cubes of cooked butternut squash or sweet potato.

Delicious salad

I received some delicata squashes in my farmer's box and did not quite know what to do with them. So I tried this recipe and it became one of my favorite salads.

Easy summer salad

Fantastic and prepares in a flash! This recipe has become a family favorite and we often serve it up for guests alongside a nice piece of barbecued meat. My daughter and I eat it as a complete meal as it combines varied flavors and and is healthy.
