An addictive and easy to work with dough.

I found this dough extremely easy to work with using cookie cutters. I found that there was no "spreading" of the dough during baking. I liked the use of lemon, I thought it gave a nice added flavor. This is a nice soft dough to work with, so make sure it has had ample time to "chill" in the fridge and a well floured surface to be rolled out on. I also find that switching between sections of dough and letting the "scraps" rest in the fridge is a good idea.

DO NOT USE FOR CUTOUTS!

I love WS recipes, but this one is not good for cut-outs at all. Use the one under animal cutouts. It works perfectly, as the dough retains its cutout shape and does not spread. This dough spread horribly--so much so, that my cookie shapes were unrecognizable. (Even freezing the dough didn't help) The taste was fine, however. That being said, this wouldn't be a bad recipe if your interested in drop cookies, but stay away for cutouts!
