To save time, substitute 6 cups canned beans, drained and rinsed, for the dried beans. Add to the ribollita along with the bread cubes.

Easy healthy delicious

This recipe does not require a ton of prep before putting it in the slow cooker, or a ton of accuracy with ingredients. The bread is really delicious and creamy in this. I add a dark Belgian beer toward the end, and top the stew with good Parm and good sherry vinegar. I only make a half recipe and it's a lot of food!
