the filling is so rich and creamy, but not overly so. i cheated with with premade frozen crust and puff pastry and it was sooo delicious!

Delicious potpie

I made this potpie for dinner tonight and my family loved it! I have to warn you that the prep time takes awhile, so this is not one of those "quick and easy" meals, but it was well worth the time. I didn't have turkey on hand, so I used chicken. I also added a tablespoon of chicken glace (W&S, of course!) into the saucepan with the stock, thyme, and bay leaf, after I had removed the herbs. Adding it to this sauce gave the dish extra flavor. I also added 1/4 cup of sherry to the chicken broth, again for flavor. Other than these little additions, I kept to the recipe given, and the results were wonderful. My family enjoyed this dish and I would recommend this recipe. I own the W&S Comfort Food book and noticed a chicken potpie recipe listed. I may try that one next for comparison, but this online recipe is very impressive.
