Thai Shrimp on Lemongrass Skewers

A thin, firm stalk of lemongrass makes an aromatic skewer for shrimp. Serve these shrimp with a cucumber salad seasoned with rice vinegar and fresh cilantro.

Lovely Flavors, Challenging Execution

The flavors in the recipe were lovely and the shrimp divine. The lemongrass I could get in winter was a bit dry and thick and very hard to thread the shrimp and scallions on it, even after splitting the stalks. Maybe fresh lemongrass would work better.
