easy but cook longer for best results

i made this for a friend who cannot eat beans or corn - i didn't put the corn meal i at all but chose instead to let it simmer and reduce.
i cooked it for six hours total and the meat was falling part great! i added liquid as needed as it cooked. i also added a little more beef stock as it reduced.
this is a great dish, and easy.
Pros: Good Value, Easy, Healthy, Adaptable, Impressive, Will Make Again
