Sweet Potato Puree with Caramelized Marshmallow
Our recipe from James Tracey of Craft in New York City takes an old favorite in a sophisticated new direction with homemade marshmallow meringue. Whipped to stiff peaks, the sugary meringue turns golden brown as it bakes in the oven atop silky, nutmeg-scented sweet potatoes.

Can't wait to make again

I am planning my 2012 Thanksgiving menu and I cannot wait to make this again. Last year was my first time making this dish and it was so delicious, I vowed to make it a permanent part of the T-Day line-up! If you love sweet potatoes, you will find this to be absolutely heavenly.

Everyone loved this dish, good for a buffet. Downside is it separates if not served immediately

Delightful Holiday Treat with a Twist

I roasted and pureed the sweet potatoes the day ahead and refrigerated them in the baking dish overnight. The next day, I began with dissolving the gelatin. My marshmallow topping did not turn out well. I am sure it is my inexperience with using gelatin, and I would try it again. I had to improvise, so I melted two cups of mini marshmallows in a saucepan with two tablespoons of butter. When that was soft and fluid, I poured it on top of the pureed sweet potatoes and finished baking. The sweet potatoes were delicious and the improv marshmallow topping was a nice Plan B. I will probably try the recipe as written again. It turned out well, though. Again, the sweet potato puree was elegant and tasty.
