Recently made minestra for a 'soup and bread' fundraiser, and it's a winner! Will make it again (and again!). Made the pesto with combination 'spinach and arugula' market mix. And then leftover pesto added to zucchini gratin side-dish- yum!
Pros: Yield, Healthy, Appearance, Impressive, Will Make Again

I was pleasantly surprised by how good this dish was... it was a combo of fresh healthy ingredients that tasted great together... however i made a variation with the arugula pesto i cut the arugula in half and subsituted the rest with basil
