Summer Squash Saute with Basil & Tomatoes

Summer squashes contain a lot of moisture in the center, near their seeds. To reduce the amount of moisture released while quickly sauteing the squashes, cut them in half lengthwise and run the tip of a small spoon down the center of each half to quickly and easily remove the seeds. Then slice as directed in the recipe.

I took advantage of the early summer bounty at the local market. I often roast these ingredients, but it's hot and I didn't want to turn on the oven. I googled a sauté dish with zucchini, yellow summer squash and tomatoes, and found this recipe. It's a keeper...removing the seeds from the summer squashes is brilliant. The veggies are crisp-tender w/o the soupiness that can often accompany summer squash. (One change - I did add a finely diced shallot to the oil before adding the squash.) It is an utterly gorgeous dish, and it tastes as good as it looks. Do include the freshly grated parm and the thinly sliced basil...the icing on the cake...

First of all, this recipe is so visually appealing. The blend of colors is wonderful. It couldn't be easier to prepare. The parm was a nice surprise. Great for a summer side!
