Strawberries and rhubarb are the long-awaited first sign of spring fruit. Because both are low in pectin, this recipe adds the peel and the flesh of oranges to give this bright-flavored, tangy jam the body it needs. Set it out with cream scones, biscuits or crusty bread.

Easy Jam Recipe

Easy to make, great tasting jam. Love the orange flavor! It reminds me of a strawberry rhubarb pie! Make sure to take into account the step for the overnight blending/mellowing of the fruit flavors prior to cooking the jam. It makes a bit more than the 7 half-pint jars, so sterilize an extra jar!
