Strawberry Genoise with Whipped Cream

The genoise, a light, elegant sponge cake, is one of the building blocks of French baking, used as a base for both layer cakes and jelly rolls. The successful leavening of the cake depends solely on how much air is whipped into the eggs. Heating the sugar and whole eggs before whipping helps the eggs attain the maximum volume possible, although a slightly denser, still satisfying, version of the cake can be made without this step. Some genoises, such as this recipe, contain a little butter, which tenderizes the crumb.

Very pretty for special occasions

Loved this recipe. Cake was very tender and the whole thing was easy to assemble. I've made it several times and sometimes to cut down on fat and calories I've used Lite Cool Whip for the filling with very good results. Also I've used raspberries in place of the strawberries. It is one of my favorites.

I made this recipe for Easter and everybody loved it, it's not hard to do and it taste great.
the cake was really moist and it was delicious.

Perfect Summer Dessert

Though the preparation might be a little tricky for a first-time baker, taking the extra step to heat the eggs made this cake so light and delicious. The whipped cream is a great balance of creamy without being too sweet. This was a great alternative to a birthday cake at an adult summer birthday celebration.
