Great Tea Cake, or Served with Pumpkin Ice Cream

I made this cake but used 2 t. powdered ginger in place of fresh ginger and omitted the crystallized ginger altogether. It made a wonderful cake to serve with tea or coffee. It was dense and moist with a texture like a quick bread and the flavors of lemon and ginger blended delicately and developed beautifully when stored wrapped in plastic wrap overnight. I served it warm to guests as dessert with a scoop of home made pumpkin ice cream and some whipped cream. Heaven!
Pros: Quick, Easy, Adaptable, Will Make Again
