Even if you don't have a square 9" springform pan

You can still make this cake. Just prepare your favorite heavy cake pan, that approximate size, and line the bottom with waxed paper or parchment paper for ease of removal and start baking. I like to sprinkle a bit of extra sugar into the pan before putting the batter in, so the top of the cake ends up with a sugary crunch. This cake freezes beautifully and is easy to send, unglazed, as a gift. Just include the glaze recipe. Enjoy!
