Absolutely delicious

I just got the dish out of the oven and could barely wait to try it. I spooned a little bit in a bowl to let it cool and had to write a review right away. This souffle is delicious! I like sweet potatoes in general but have never had them like this before. The gruyere cheese gives this dish a rich and salty flavor and the sweet potatoes are so smooth and silky. I did ommit the garlic because I just wasn't sure about the flavor of garlic and sweet potatoes together. I'm glad I did because this tastes perfect to me. The dish is a bit time consuming to make but totally worth it in the end.
Pros: Yield, Good Value, Kid-Friendly, Appearance, Impressive, Will Make Again
Cons: Unhealthy, Lengthy

Get ready for some dirty dishes

yes, it's lots of work, with lots of dirty dishes to boot. The taste was wonderful! I added the cheese on top at the beginning. Glad I did because it was crunchy and yummy.
Pros: Impressive, Will Make Again
Cons: Lengthy, lots of clean-up

Really great recipe. Tasted fantastic, good alternative to the sweet potato casseroles. Light and fluffy, everyone went back for seconds. Actually was quite stable when taken out of the oven. We ate it with the roast pork loin with marmalade
