Souffleed Banana Pancake

This recipe calls for beating the egg whites until stiff peaks form. The whites should hold their shape and stand upright when the beater is lifted. When folding the beaten whites into the batter, take care not to deflate them or the pancake won't rise properly. Use a firm but light hand and stop folding when the mixtures are just blended.

I make ours gluten free and add dark chocolate chunks. Disappears in a blink of an eye.

Started making this recipe for a family Holiday Gathering and it was a huge hit. Have been making it ever since, and it works every time. It is really easy to make, but takes a little time. I just get the coffee brewing and enjoy while I work through the various steps. The trickiest part was browning the bananas in the sugar, but there is no wrong way to do this, and now I use this trick even when I make regular pancakes and top them with the browned bananas and powdered sugar. Make sure to drizzle some real maple syrup over after serving.

This was an awesome recipe. Although it involves a little bit of work, it is so worth it at the end. The lovely bits of banana in between the pancake were delicious. Dop try this when you have ripe bananas lying around(instead of whipping up the same old banana bread).
