Slashed Chicken with Herb Butter

Before roasting the chicken, use a sharp knife to cut slashes in the legs and breasts. Herb butter, along with garlic slices and bay leaves, are pushed into the slashes so the flavors penetrate the meat.

My wife, who eats only chicken, chicken and chicken considers this her all-time favorite. Quick and easy to make, but the results are world-class.

Best Roasted Chicken Recipe

I love this recipe and make it often. It is a great recipe for entertaining and is perfect for my Le Creuset dutch oven. Another variation is to use chipotle seasoning in place of the herbs and spices indicated. You won't be disappointed with either!!

Great Dutch Oven Meal

I've made this recipe many times and it's been a great hit! The flavors of herbs, garlic, and butter really come through during the cooking. Using my Le Crueset dutch oven ensures for a more evenly roasted chicken.
