This is very easy and quite tasty. After I peeled off the zest, I cut the lemon up and stuffed it in the cavity of the chicken prior to roasting. It enhanced the lemon flavor.
I plan on using the carcass, giblets and left over herbs to make a small amount of chicken broth.
Waste not want not.
