Sicilian Lentil Soup

You will need to seed and dice the plum tomatoes for this recipe. First, use a chef's knife and cut each tomato half lengthwise. Gently squeeze the tomato half over a bowl to remove the seeds and excess liquid. Next, cut each tomato half lengthwise into thin strips. Line up the strips and cut across into a dice. Repeat with the remaining tomato halves.

good, not great

This is good as an occasional soup if you happen to have the ingredients on hand, but certainly lacks flavor--add broth and tons of salt.

Easy And Authentic
February 6, 2011
A soup you really will be served in Sicily, at home and in casual trattorias, this dish is easy enough to make on a weeknight.
Followed by a slab of good bread, served with cheese and a bowl of fresh fruit - grapes, oranges, apples and fresh figs - to go with the cheese , it makes a meal so good that you will forget it is super healthy, too.
Since I wrote this recipe for FoodMadeFast - Vegetarian, I will give it a modest 4*** and share that it is one of my most favorite dishes.
