Great Appetizer

This Ceviche came out wonderfully. It was difficult to keep the cucumber together so make sure that your slices are thick enough to leave enough structure to hold together. I made 4x the recipe for a party of 12 people and did not have any leftover. I highly recomend this recipe.

Great appetizer for entertaining

I've made this as an appetizer often, and it was popular at a baby shower I recently cooked for. The cups are perfectly bite-size and deliver a lovely mouthful of flavor. They look very pretty and impressive on a platter. Make sure to use not previously frozen shrimp, which can be hard to find, so be sure to ask! It can be a bit finicky to get the filling into the cups but after the first couple, it goes pretty quickly. Can be prepared ahead, so again, perfect for entertaining.
