Shredded Chicken Salad with Sherry Dressing

Prepare this dish using a chicken that you roasted yourself, or to save time, purchase a rotisserie chicken, available at most supermarkets. Here, shreds of roasted chicken partner with tender spring onions and watercress greens in a seasonal salad. If you can find fresh English peas, which begin to appear in markets in early spring, use them in place of the frozen peas (shell them first and then blanch according to the recipe directions).

I made this salad for Mother's Day luncheon with my entire family and everyone, from younger kiddos to my Grandmother LOVED it. Was very easy to make and prepare - great leftovers as well. I've sent this recipes to quite a few people already. I cheated and bought a roasted chicken from the market, but it was still wonderful.

refreshing salad

- It took a little time in preparation but overall was very easy.
- The salad dressing tasted better when made ahead of time. It gave the onion some time to soak into the dressing. Also if you’re out of sherry a good substitute I used was sweet vermouth.
- the watercress was out at the grocery store so I used mixed green salad and it tasted very good.
- one small plate full will fill you up; so you really don’t need anything else with it.
