Shaved Fennel and Radish Salad

Try other raw vegetables thinly shaved with a mandoline for this recipe. Artichokes, mushrooms, peeled broccoli stems, celery, cucumbers, zucchini, kohlrabi, celery root and turnips would all work well. In summer, garnish the salad with chopped fresh herbs; in winter, use a few anchovies, capers, olives or sun-dried tomatoes.

My new favourite Salad

I made this salad because I did not want my leftover fennel & orange wedges go to waste. I added thinly sliced radishes and arugula and black pitted olives. I did not use the lemon juice to make the dressing, instead used the juice from the oranges and a little white vine vinegar. The salad is so tasty, light and surprisingly delightful.
