Laced with Parmigiano-Reggiano cheese and a trio of fresh herbs, these savory waffles are a delicious change of pace for breakfast or brunch. Serve with poached eggs and crispy bacon.

SAVORY WAFFLES FOR A CHANGE
June 23, 2010
I had been using my waffle maker just for sweet recipes but I decided to give a try to the only savory waffle recipe in the machine's meagre recipe book. I liked it, so I decided to browse the Internet in search of more. Found this recipe and also gave it a try...it's just terrific I halved the quantities because I was cooking just for two, used self-raising flour (thus omitting the baking powder) and added different ingredients, all finely chopped, to the batter. I mean ham, prosciutto, salami, chorizo, Majorcan 'sobrasada' and so on. I liked the tip of keeping them warm in the oven; I used my glass convection oven. I found it helps to keep the waffles crispy as well. This will be no doubt one of my often-made recipes.
