Perfect Light Dinner or Lunch

Excellent blend of flavors. I added a touch of honey to the dressing and grilled the salmon with some herbs. My friends and family loved this recipe.

Refreshing and light

This is practically a one dish meal. I made it for Easter brunch and everyone loved it. I plan on making it to take to the beach this summer-a perfect picnic dish. It is very healthy and filling with out being heavy and very tasty.
