Roasted Tomato Soup

In this recipe from Chef Ray Garcia, roasting further concentrates the flavor of these early harvested tomatoes. If Early Girls are not available, substitute large plum tomatoes or high-quality canned San Marzano tomatoes.

Additions to Recipe

At the cooking class, they added Balasmic Vinegar to toss with tomatoes before roasting. Also, add about 1/4 cup of dry white wine to finish the recipe off! Yummy!

Delicious Soup

We made this soup at the technique cooking class. This soup is absolutely delicious. The roasted tomatoes are rich and very flavorful. We roasted the onions along with the tomatoes for extra flavor. . You could chop a little basil on top and/or crumble a little blue cheese. Just a tip.
