Roasted Tomato-Basil Soup

For an easier version of this soup, replace the fresh tomatoes with 4 cups canned fire-roasted tomatoes. Add to the sauteed shallots along with 1 Tbs. of the basil in the second step, and saute for 5 minutes before adding the wine and water.

Its good but add in more spice

I made this soup today. I like it but its a bit bland. I would suggest adding another 3-4 cloves of garlic, more basil (while the soup is cooking) and perhaps fresh oregano.

This soup was tasty. However, the recipe says it yields 4 I made it for 2 of us and it was BARELY enough. next time I would double or triple the recipe. That being said it was good!
