This recipe is so easy to prepare. I made this recipe along with the champ for a family birthday celebration. I received raves about the food! There weren't any leftovers-everything went. (If we could have, I think we would have licked our plates clean.) The gravy/sauce that is made with the chicken is THE best gravy I have ever made or tasted. For Thanksgiving, I used that basic recipe with our turkey and it turned out just as fabulous. It's the only poultry gravy recipe I will make now.

I used applewood smoked bacon and an oakey Russian River chardonnay in the sauce and served with the meal. I followed the recipe as stated; the chicken was just delicious, very tender and moist. I served the carved chicken with a light asparagus spring risotto and a spinach salad. I would not change anything in the recipe and will make this often. The aroma is just heavenly and the chicken got rave reviews from my family. I'll make the Champ next time :)
