Roasted Acorn Squash with Chipotle and Cilantro

Herbal cilantro and tart lime juice help cut through the creaminess of the squash. Spicy and smoky chipotle chilies, too, are a delightful contrast to the sweet autumn vegetable. The result is a balanced dish that's not too spicy, with many layers of intriguing flavor.

Great side dish

I used butter squash instead of acorn squash and it turned out great! The sweetness of the butter squash toned down the chipotle a little. I skipped the lime and used two tbsp of olive only. Definitely will make it again.
Pros: Quick, Easy, Healthy, Adaptable, Will Make Again

Delicious!!

Loved this recipe! Great side dish and the flavor was smokey and a tiny bit sweet without too much spice. I reduced the olive oil to 2TBS and it was plenty. I think next time I might switch out the sugar for blue agave syrup. Definitely will be making this recipe again!!
Pros: Quick, Good Value, Easy, Healthy, Appearance, Adaptable, Impressive, Will Make Again
