Roast Pork with Apricots

This rich and creamy dish tastes as good as it looks. The concentrated essence of dried fruit is a classic complement for almost any preparation of pork. Here, the roast cooks slowly with apricots to create a memorable dish. Prunes may be used in place of the apricots. If you do, omit the orange juice and add a couple tablespoons of fresh lemon juice.

Easy Gourmet Dinner
February 28, 2013
I was looking for something different to do with pork and slow cooker, other than my usual BBQ pulled pork. These simple ingredients and easy steps (I used a slow cooker) yielded such flavorful and sophisticated dish. I made it for two of us and I was expecting that it would last for a few days, but it was gone in 1 day.
Pros: Easy, Will Make Again

Good Enough for Company

A very easy, aesthetic and delicious main dish! The ingredients and presentation make it a wonderful autumn/winter entree. I served it with steamed green beans and roasted butternut squash and our dinner guests were enthusiastically responsive.
Pros: Easy, Healthy, Appearance, Impressive, Will Make Again
