Roast Lemon Chicken

Few dishes say supper like a beautifully roasted chicken, with juicy meat and burnished skin the color of chestnuts. This lemon-and-herb scented version is cooked in a frying pan instead of a roasting pan, which makes the drippings especially dark and flavorful-the perfect start to a successful gravy.

This recipe is always a hit. A brined chicken is a flavorful and juicy. I do not baste the chicken while it is cooking and still it is moist and delicious. My guests have commented that the gravy is very lemony and you may not want to serve it over other side dishes.
Pros: Good Value, Easy, Impressive
