A creamy risotto is a great way to feature fresh vegetables and herbs, such as the sugar snap peas, leeks and tarragon used here. Round out the meal with a green salad with radishes and end with strawberries splashed with balsamic vinegar.

Perfect Spring Meal

I made this dish alongside some simple chicken as a "Welcome Spring" meal. The creaminess of the risotto is enhanced with the bright and tender snap peas. Personally, I enjoyed the tarragon, however some thought it tasted too licorice-y. Basil could be a nice substitute if that bothers you. (I also forgot to pick up pancetta. Disgraceful, I know! It tasted fine without it, for a vegetarian option.)
Pros: Yield, Easy, Appearance, Will Make Again
Cons: requires full attention!
