Great hearty dish

This is a relatively quick and easy dish to make. End result was delicious and reminded me of the homemade pasta sauces an Italian friend of mine makes from scratch. The vegetables don't entirely cook down after an hour, but I prefer the chunkiness. I substituted about a 2 tablespoons of chopped garlic for the fennel with great results. Served this with red wine and crusty french bread for a great dinner.
