Rigatoni with Pork Ragu

This rich sauce, redolent of red wine and the sweet flavors of pork and fennel, is a classic pairing with rigatoni. Storage tip: The pork ragu can be made in advance and stored in an airtight container for up to 3 days in the refrigerator, or for up to 3 months in the freezer.

Great hearty dish

This is a relatively quick and easy dish to make. End result was delicious and reminded me of the homemade pasta sauces an Italian friend of mine makes from scratch. The vegetables don't entirely cook down after an hour, but I prefer the chunkiness. I substituted about a 2 tablespoons of chopped garlic for the fennel with great results. Served this with red wine and crusty french bread for a great dinner.
