There is no question that home-made pasta is a labour of love, and stuffed pasta, even more so. We made this last night and it was a perfect late-summer meal.
The pasta was light & delicate, and the ricotta filling was bursting with flavour. The pasta squares themselves were surprisingly resilient, too. We were all a bit nervous about popping them into boiling water after all that work, but they cooked beautifully and remained intact - even the rather sorry-looking specimens (it was our first effort at using the KitchenAid ravioli attachment).
We will definitely make this again.
