Perfect! Not fast, but worth the effort!

I had never made or eaten pumpkin soup before, but I knew I loved butternut squash ravioli with sage browned butter and assumed this would be similar. I am terrible about following recipes exactly and always find myself tweaking at least one part, so when it came to trying this recipe, it was no different... I used 'orange thyme' instead of regular thyme and I added one purple sage leaf to the bouquet, and then another to the finishing butter, just briefly, as it was browning. I have to say, that I am more than pleased with the results! It was just as I had imagined, possibly even better. I looked at MANY different recipes before choosing this one to make for a very large Harvest Dinner we are hosting this year. It had the most potential, wasn't too 'ethnic', and had just the right amount of richness to be one of the earlier courses. If necessary, I am almost certain you could substitute different winter squashes and have similar results. Make this, and you will not be disappointed!

Delicious soup!

Our family had this soup with sandwiches for dinner tonight. It was delicious and very flavorful. All of the assorted sautéed vegetables added depth. The topping of browned butter and creme fraiche gave it a beautiful bit of richness. I later thought a sprinkling of toasted pumpkin seeds might also be a nice addition!
