Pumpkin Pie Waffles
These may never replace pumpkin pie at a traditional Thanksgiving dinner, but they will give tradition a good race. Like pumpkin pie, they are comforting, custardy and filling. The waffles are made with the same spices used for pumpkin pie along with sour cream for smoothness; the dark rum is there for extra flavor and a little mystery.

I just made this for breakfast using my brand new Belgian waffle maker and to my pleasant surprise, it was wonderful! The waffles had a good pumpkin pie flavor with the right amount of sweetness and richness (buttery) and the kids devoured them! They were crisp on the outside and soft on the inside. I actually burned the first one because I thought I'd need to really wait till they're golden brown! After making a few, I realized they actually crisp up quite a bit after coming out of the waffle maker - even though they're quite soft and I had to "peel" them out with tungs to get them out so I wouldn't recommend waiting till they're crisp in the waffle iron. I used the medium heat setting and coconut oil to lubricate the waffle iron (get a little chunk on the hot iron and then spread with a brush). I first gave the kids butter and maple syrup (as usual) but upon tasting my first one I took them away because they tasted great without the additional butter & sugar!
Pros: Easy, Will Make Again, good flavor

A great twist on breakfast (or dessert)

These are a wonderful treat for breakfast (and dessert). There is a bit of effort to put this together, so it's not a quick meal unless you prepare everything the night before, but it's great for a Sunday brunch. One thing to note is that you do need to cook these until golden brown, if it's not brown it's underdone and a bit soggy.

A Lazy Thanksgiving Morning Treat!

These waffles are so delicious! I made them for my grown children on Thanksgiving morning. I topped them with a small scoop of vanilla ice cream which made them decadent and delightful. The waffle itself is moist and screams of the holiday spices. I will be making them again next Thanksgiving for another lovely morning brunch.

Great for Holiday fun

These waffles are a great treat in the morning or evening for that special day during the holiday season. The spice and taste make it so that it should be a food for all season

Love, love, love these waffles!
I have been making these for several years now. For a real treat, serve them with WS's pumpkin ice cream--delicious!
