Portuguese Clam and Sausage Stew

Use fresh Mexican (not dried Spanish) chorizo, or substitute hot Italian sausage. While Asian fish sauce may seem out of place here, it's a trick to add an indescribable element of flavor.

I only made one minor change. I used 2/3 cup of liquid: 1/3 water and 1/3 white wine. You can use all water or part chicken broth if you don't want to use wine.
Don't change the sausage much since that is where the flavor comes from.

Easy and Healthy

This is part of the rotation - added cubed pancetta for extra flavor. Used Manila Clams and milder Andouille sausage instead of the chorizo. Awesome!
