Delicious and healthy!

This stew is hearty and delicious. I make just a couple of modifications (this is on the weekly dinner rotation). I omit the carrots and potatoes and replace with one can each black and white beans. For the meat, I use a pork tenderloin. I serve the stew with a little sour cream and avocado. So good!!

Rainy Day Comfort Food

I made this today with shredded pork I already had. My husband really loved it, but I thought the carrots were a strange ingredient. I will substitute sweet potatoes next time, and add corn. We both loved the tomatilloes, and it was easy to put together.

Superb and delicious

This is one of my favorite WS recipes. It is so easy to prepare, the ingredients are healthy and it is a nice colorful presentation. I would make one slight modification; keep the lid on. Halfway during cooking I realized that the potatoes were not cooking . I kept the lid on and the stew cooked perfectly.
