Pork and Tomatillo Stew

The loin, a relatively lean cut of pork, works beautifully in this clean-tasting stew that is chunky and hearty enough to satisfy die-hard chili fans. The ingredients are cut into bite-size pieces so that the distinctive flavors of the vegetables-tomatillos, tomatoes and carrots-shine through. When serving cheese aficionados, sprinkle each bowl with shredded pepper jack.

Delicious and healthy!
February 22, 2013
This stew is hearty and delicious. I make just a couple of modifications (this is on the weekly dinner rotation). I omit the carrots and potatoes and replace with one can each black and white beans. For the meat, I use a pork tenderloin. I serve the stew with a little sour cream and avocado. So good!!
Pros: Easy, Healthy

Rainy Day Comfort Food
January 21, 2012
I made this today with shredded pork I already had. My husband really loved it, but I thought the carrots were a strange ingredient. I will substitute sweet potatoes next time, and add corn. We both loved the tomatilloes, and it was easy to put together.
Pros: Good Value, Easy, Healthy, Appearance, Adaptable, Will Make Again
