Polenta with Summer Vegetable Ragout

It's best to avoid using purchased vegetable broth that lists carrots as the first ingredient. This gives finished dishes an orange cast. If you do not have vegetable broth, substitute water and add 1/3 cup grated Parmigiano-Reggiano cheese.

Absolutely perfect! I was able to sample dishes in this style while in Italy and I'm so happy to be able to recreate it at home!
The veggies are bright and colourful and are great companions to one another.
I balked at the 1 tablespoon of salt in the polenta but it really added flavour and the result didn't taste too salty. I also was tempted to add some salt and pepper to the veggies while they were cooking but resisted and was glad I didn't add it in the end. Salt to both the veggies and the polenta would have been too much.
The whole thing took about 45 minutes. Delicious!
