Plum Butter

Achieving the correct viscosity for this butter can be tricky, since the cooking time varies according to the ripeness of the plums. After the butter is simmered, it should have the thickness of heavy cream, and once it cools a bit, it should drip thickly from a spoon.

Strong Flavor

This is a very time consuming jam. I cleaned the plums and cooked them. After they were cooked, I placed all of the skins and juice into a food processor to ensure I had the skins chopped very finely. It had a really pretty color but it turned out too thick but I may have cooked it longer then needed. It does have very good flavor...I liked the addition of the orange in the jam. I highly recommend this recipe...just follow the recipe closely.

To Die For, Delicious!!

This was a labor intensive Plum Butter, but it was well worth it!! I used probably 6# of plums and 3 cups of sugar and sorry a couple tablespoons of store bought pectin! The boiling recommendations are right on and scientifically correct!! I truly believe boiling to the right temp is so key w/Jam, jelly and butter making!! The flavor is awesome because of the cinnamon, orange and vanilla-the added beautifully to the recipe.
