A specialty of the Basque region of France, piperade is based on tomatoes and bell peppers cooked in olive oil. It can have many variations, including the addition of onions and meat. Here, andouille sausage lends a spicy kick.

Perfect for the "breakfast for dinner" craving

This recipe is easy to prepare and uses ingredients that you most likely have on hand. It is delicious and filling. The picture shown does not make this dish look appetizing but it actually is very pleasing to the eye. I have served it to company and have had rave reviews.
