Persimmon Pudding

Two of the most common persimmon varieties are the Hachiya and the Fuyu, both available from October to February. For this recipe you will want the larger Hachiya fruits. Let them ripen until completely soft.

I'll be making this pudding again this year and know everyone will love it again! Our neighbor has a persimmon tree and has been generous. Make this dessert for something not to difficult but impressive. Oddly, WS does not carry (or they didn't in 09) a steamed pudding pan. I went on line and found one but saw them later at SLT.
WS store sold me a tube pan which did work but doesn't have a lid so is kind of a hassle. The traditional pan is more fun anyway :)

Pudding mold
I have also tried, and loved, this recipe. It's an impressive holiday dessert.
WS does have a pudding mold if you're interested. I bought it for a gift so I haven't tried it out. Would be interested in hearing how it works.
