Penne with Escarole, Spicy Sausage and Rosemary

At one time, fresh rosemary was used mainly for medicinal purposes. Later, the aromatic herb became popular in the kitchen and is now a favorite for seasoning soups, stews, roasted meats and sauces. It adds a delicious herbal note to this pasta, balancing the spiciness of the sausage and the bitterness of the escarole.

Great on a cold night

I'm so happy I found this recipe, because I never thought of broiling italian sausage. It is soooo much easier then frying it, plus it gives it a nice crisp. I will definately broil italian sausage the next time I want sandwiches.
But back to the recipe...
It turned out great, and was faster than making it with the traditional rabe since I didn't have to blanch the escarole. However, it could have used more greens. Next time I make it, I will use 3 bunches of escarole as opposed to the 2 bunches that is called for.

My family loves this receipt, it has become a family staple. I do reserve more of the pasta water, everyone prefers more liquid and sometimes use chicken sausage, just as good!

Fabulous recipe

This recipe is phenominal. It has only a few ingredients but is definitely restaurant quality. It only takes about 20 minutes to prepare but I would be proud to serve it to any company. Be sure to use the hot (spicy) sausage. it does not make the recipe too spicy but it does make it burst with flavor.
