Peach Cobbler

Cobblers celebrate ripe, juicy fruit of all kinds. No amount of sugar will improve the flavor of hard, flavorless, out-of-season fruits, so wait until you have the perfect specimens before you make a cobbler. Arguably, peaches make the best cobbler of all, and a scoop of vanilla ice cream makes a good thing even better.

Perfect for summer fruit!

Wow, just made this with peaches and blueberries from my farmer's box; and it is amazing! I actually used less brown sugar because my peaches were so ripe (got the box several days ago...). The filling is sweet (but not overly so) with a lightly sweet topping. Doesn't feel heavy at all.
Very easy to make without much prep work required.
The dough on top is mixed to the consistency of bisquick mix.
Pros: Easy, Adaptable, Will Make Again
