For this whole-grain take on bread salad, use a combination of red, yellow and zebra heirloom tomatoes, if you can find them. Some markets sell prepared corn bread, or you can bake a 9-inch square of corn bread from scratch (see related recipe at left).

This is a very tasty dish that is not terribly hard and is full of different textures. It is definitely a staple of mine now!
If you have a Fresh Market around you, their already prepared cornbread takes some of the hassle out of this dish. Heirloom tomatoes really make this dish colorful, however are not necessary.
Pros: Easy, Healthy, Appearance, Adaptable, Impressive, Will Make Again
Cons: Cost
