Pad Thai
This simple home-style noodle dish made with chicken and shrimp is quick and easy to prepare. The right noodle is essential. Look in Asian markets and well-stocked food stores for the flat ribbon-shaped noodle called sen lek in Thai. They are 1/8 inch wide and made with rice flour.

My First Attempt at Pad Thai

This was pretty good and rather easy. Aside from some prep work, the amount of time spent cooking is minimal.
We doubled the recipe and as such, I have to wonder how the recipe, as written, would serve six. I would say doubling the recipe would serve six.
I used half lime juice and half rice vinegar. As written this is pretty good. We did add a bit more of certain things to add to the flavour. We added additional lime juice and some hot peanut sauce whilst cooking. When serving we added some lime zest to the garnish.
In the end, it did tighten up a bit too much, so next time I will add more liquid. Lastly, I am kickng myself, as I used chicken stock, but I then remembered that I had just bought a box of Thai cooking stock. Next time, I will definitely use that. Overall, a good recipe and I will make again.

Better than most restaurants

Easy to follow recipe - great results. I made it with shrimp and scallops. This was better than most restaurants. I will definitely make this again before order pad thai from another restaurant. This is a great recipe for a simple dinner.

Better than take-out!

This recipe was simple to follow and didn't take long to prepare at all. The final product was just as good as the local Thai restaurant but without having to drive to pick it up or having to pay as much. Great paired with the spring roll or pot stickers; recipes also found at Willams-sonoma. I will make this again and again.
