To make the classic osso buco garnish known as gremolata, combine 1 Tbs. chopped fresh flat-leaf parsley, 1 Tbs. grated lemon zest and 1 garlic clove, finely minced. Scatter the gremolata over each serving. Osso buco is traditionally served with saffron risotto, but steamed rice or quick polenta are also excellent accompaniments.
