Open-Faced Croque-Monsieur

At Pastis in New York City, the chefs prepare a rich, open-faced croque-monsieur. Generously sauced with bechamel, it must be eaten with a fork and knife. For a Pastis-style sandwich that requires utensils to eat, use about 1/4 cup bechamel. If you prefer a sandwich that you can eat with your hands, brush on a thin layer of bechamel, slightly less than 1 Tbs. per sandwich.The perfect complement to this croque-monsieur is a simple salad of mixed baby greens dressed with a vinaigrette of extra-virgin olive oil, fresh lemon juice, salt and freshly ground pepper.

Perfection and simple

I've made this for years, it is wonderful. My niece said if she was in the death chamber, she would order this as her last meal!! So yummy and comfy, this is a great recipe. nice with simple salad or fruit. Use quality ingredients always.

First saw this dish in the movie "It's Complicated". It looked so good when Meryl Streep was serving it to Steve Martin, that I had to try and make it. The recipe is so easy. Between the crusty bread, creamy bechamel sauce and gruyere cheese and a good ham it is a wonderful dish. Great with some dijon mustard.
