Unique and delicious

I was unsure about which type of olive oil to use but I went ahead and used "The Good Kind" (extra virgin, cold pressed, dark green) and did not regret it. I was worried about the intense flavor throwing the others off balance but it did not. The flavors blended perfectly.
I am not typically a dessert lover because the flavors are often one-toned but this one is a winner with its multiple flavors playing off of each other beautifully.
I substituted raspberries for the cherry compote and it was delicious.
