Nested Eggs

Herb-scented turkey hash makes a delicious "nest" in which to bake eggs. This clever dish is an ideal main course for a brunch party held on Thanksgiving weekend, when you are bound to have leftover turkey on hand. If you do not have an ovenproof fry pan large enough to hold 12 eggs, divide the mixture between 2 smaller pans.

Delicious post-Thanksgiving day recipe

I halved this recipe for our smaller group, and it turned out beautifully. I had extra sauteed onions, celery and mushrooms leftover from the stuffing that I used in place of the onion alone. I only had fresh thyme, but I don't know that we really missed the lack of other herbs. It was nice to use leftover turkey in a breakfast dish instead of another main. This would also be a great use for leftover rotisserie chicken.
