Mushroom, Sausage and Roasted Red Pepper Lasagna

A popular cheese used for making lasagna, ricotta means "recooked" in Italian. It is so-named because the whey-based cheese is prepared by heating the whey left over from making sheep's, goat's or cow's milk cheeses. Most Italian ricottas are made from sheep's milk, but any variety of fresh ricotta will work in this recipe.

I've made this recipe twice and both times it was such a hit! I used regular tomato sauce instead, super easy and tasty

Absolutely Divine!

This lasagna is absolutely incredible! A few items of note, however:
1) I used homemade tomato sauce instead of the roasted red pepper sauce.
2) I used 1/2 turkey sausages and 1/2 mild Italian sausages. It was a nice combination of flavors.
3) There was no way I could get 5 layers out of this (I got 3 instead, which worked out just fine).
4) I totally agree with another poster that this serves about 8.
5) I used no-boil lasagna, which worked just fine.
This recipe takes some time but you will have lots of leftovers and the taste is spectacular!
