Meat Loaf with Gravy

Meat loaf rarely gets points for good looks, but it sure can be delicious! Use beef, veal and pork, a trio that yields an especially flavorful loaf that is also easy to slice. And don't neglect to make gravy from the pan drippings to spoon over the meat loaf and, of course, over a mountain of creamy mashed potatoes (see recipe at left).

Great recipe - I used a half cup of ketchup and added minced onion and a bit of soy sauce to the gravy and it turned out wonderful.

My guys are very picky about their meatloaf, so I have tried many recipes without success. Finally, I came across this one and they love it. They are not fans of ketchup, so I add an additional tablespoon of Worcestershire sauce and minced garlic, as well as Panko bread crumbs and the outcome is a lighter meatloaf; not as dense as others!!!! I am repeatedly asked to make it for my guys!
